Tirolen knödel suppe: Tyrolean soup with cake dumplings

The treasure of Tyrolean cuisine is also great in our area. Especially if you spend the winter in the mountains. Warm, strong broth and excellent dumplings (no dumplings!) with signature Tyrolean bacon will fill you up when you come home from a trip or skiing.

Cut the bread or pastries into cubes and cover them in a bowl with a little warm milk. Heat the butter in a frying pan and fry the bacon cubes on it. Beat the eggs with the rest of the milk and add to the pastry bowl along with the fried bacon. Add the bread crumbs and most of the chopped chives. Salt, pepper, grate nutmeg and mix everything well.

With wet hands, form 12 round dumplings. Boil them in salted water for 10-12 minutes.

Meanwhile, heat the broth in another saucepan. Divide the dumplings into plates, pour the hot broth over and sprinkle with the remaining chives.
