Lyon Fries – French fries slices with caramelized onions

French fries are one of life’s simpler pleasures. To prepare it, you only need potatoes, a little fat and a lot of salt. In the traditional French preparation after Lyon, there are also caramelized onions and lots of butter. Love at first taste!

  1. Cut the potatoes into half a centimeter slices and pour cold water over them in a saucepan. Bring to a boil and simmer until potatoes are partially tender, about 4 minutes. Drain and pat dry so that they are as dry as possible. Peel the onion and cut it into thin slices.

  2. Heat 1 tablespoon of butter and 1 tablespoon of oil well in a large non-stick frying pan and add half of the potato and half of the onion. Sauté potatoes until brown on ends and onions are golden, about 5 minutes. Add the remaining butter and oil, then add the remaining potatoes and onions and continue to sauté, stirring constantly but carefully, until all the onions are softened and caramelized, about 15 minutes.

  3. Remove the pot from the heat and stir in the chopped parsley. Season with salt and pepper before serving.
